Apple-Cream Cheese Quesadillas

Great dessert with Mexican/Southwest meals

Ingredients

  • 1-1/2 Tbls. butter
  • 3 medium apples (granny smith, Cortland, macs)
  • 2 Tbls. packed brown sugar
  • 3/4 t. ground cinnamon
  • 4 oz. soft low-fat cream cheese (in a tub)
  • (4) 8-inch whole wheat tortillas

Instructions

Peel, core and slice apples.

In a large skillet over medium heat, melt the butter. Add the apples, brown sugar and cinnamon. Cook stirring gently until the apples are just tender (5 minutes). Transfer to a bowl.

Spread a little cream cheese over a tortilla and place in a very lightly oiled skillet over medium-high heat. Spread half of the apple mixture on top, spreading it over the cream cheese. Spread a little cream cheese on top of a second tortilla and place on top of apples.

Toast about 2 minutes per side. Or a quesadilla maker works great. Repeat.

Cut each tortilla into 6 wedges and serve.

NOTE: You can make the filling ahead time and just microwave to heat just to warm.
Heat leftovers in the microwave to warm.
