Overnight Oats: Cinnamon with Apple Compote

You will feel like you are eating apple pie for breakfast!

Ingredients

  • 1 c rolled oats
  • 1 c. vanilla almond milk (regular milk is fine)
  • 1 Tbls. maple syrup
  • 1 Tbls. chia seeds
  • 1 t. vanilla extract
  • 1/2 t. ground cinnamon
  • 1/4 t. salt
  • 2 Tbls. raisins, optional
  • chopped walnuts, optional for servin
  • 2 Tbls. vanilla or vanilla-cinnamon (Chobani) yogurt

Apple Compote

  • 1 Tbls. butter
  • 1 large apple peeled, cored, and diced
  • 1/2 t. ground cinnamon
  • 2 Tbls. maple syrup
  • 1-1/2 Tbls. cold water
  • 1 t. cornstarch

Instructions

Combine oats, milk, maple syrup, chia seeds, vanilla extract, cinnamon, salt and raisins (if desired) in a medium sized bowl or glass jar; mix well. Cover and refrigerate overnight.

Apple Compote: I like to make the night before when I make the oats and refrigerate both until morning. Then just heat compote in microwave for about 20 seconds, just to take the chill off.

To make compote, add butter, apples, cinnamon and maple syrup to a medium saucepan. Stir over medium heat for 3-5 minutes until apples are very tender.

Whisk water and cornstarch together in a small bowl, add to pan and continue to cook for another 1-2 minutes until mixture thickens (will thicken quickly). Remove from heat and cool completely. Store in refrigerator until morning, if not using right away.

To Serve: In the morning, stir in yogurt, then spoon oats into a cup or small bowl; top with apple compote and chopped walnuts, if desired.
