Apple Cake

Ingredients

  • 4 c. diced, peeled apples (granny smith or macintosh)
  • 2 c. white sugar
  • 1 c. canola oil
  • 2 eggs
  • 1 t. vanilla
  • 3 c. unbleached all-purpose white flour or substitute 1-1/2 c. whole wheat pastry flour & 1-1/2 c. white
  • 1 t. cinnamon
  • 2 t. baking soda
  • nuts and raisins, as desired

Instructions

Mix apples and sugar; let stand for 1 hour (THIS IS IMPORTANT)

In a mixing bowl, using an electric mixer, mix oil, eggs, vanilla, flour, cinnamon and baking soda. Fold in apples, nuts and raisins and pour into a greased and floured 9 x 13" pan.

Bake at 350 degrees for 1 hour.
