Apple Butter Waffles

Ingredients
- 1- 3/4 c. unbleached white all-purpose flour
- 2 t. brown sugar
- 1-1/2 t. baking powder
- 1 t. baking soda
- 1 t. cinnamon
- 1 t. salt
- 1 t. vanilla
- 1-1/4 c. low-fat buttermilk
- 1/2 c. apple butter (good quality)
- 2 eggs
- 1/4 c. unsalted butter, melted
- syrup, optional
Cinnamon Whipped Cream
- 1 c. heavy whipping cream
- 3 Tbls. powdered sugar
- 1 t. ground cinnamon
Instructions
Mix dry ingredients in a large bowl.
In a smaller bowl, mix eggs, apple butter, buttermilk, melted butter and vanilla; whisk to combine. Add wet mixture to bowl with dry ingredients and whisk to blend.
Pour about 1/2 c. batter onto center of heated, non-stick waffle iron and let cook until you have a nice golden outside and soft inside.
Cinnamon Whipped Cream: Add heavy whipping cream to a chilled mixing bowl. Add vanilla, cinnamon and powdered sugar to the whipping cream. Beat on high speed, with an electric mixer, until the cream reaches stiff peaks.
Top warm waffles with cinnamon whipped cream, a dollop of apple butter and drizzle with syrup, if desired.
NOTE: Makes about 8 waffles
