Oatmeal: Apple Butter Baked Oatmeal
A hot breakfast comfort food full of warming spice and apple flavors.
Ingredients
- 2-1/2 c. old fashioned rolled oats
- 1/2 c. light brown sugar
- 1 t. baking powder
- 1 t. ground cinnamon
- 1/2 c. chopped walnuts
- 2 eggs
- 1-3/4 c. milk
- 1/4 c. apple butter (more for serving)
- 2 small apples, peeled, cored & chopped
Instructions
Preheat the oven to 350 degrees.
Grease a 9 by 9-inch (or similar size) baking dish and set aside.
In a bowl combine the oats, brown sugar, baking powder, cinnamon and chopped walnuts.
Add the eggs, milk and apple butter. Stir to combine.
Add the apples and mix until thoroughly incorporated.
Pour the batter into the prepared baking dish and take to the oven (it will look soupy).
Bake for 35 minutes or until golden brown and cooked. Cool 10 minutes before cutting into squares.
Serve with a dollop of apple butter.
