Apple au Gratin

Ingredients
- 6 large apples, sliced (I use macintosh)
- 1 c. dried cherries (Door County)
- 3 Tbls. whole wheat pastry flour
- 3 Tbls. dark brown sugar
- 1 Tbls. dark honey (regular honey will work)
- 3 Tbls. extra virgin olive oil
- Frozen Vanilla Yogurt or Vanilla Ice Cream, optional
Topping
- 1 c. old fashioned rolled oats
- 1/2 c. sliced almonds
- 2 Tbls. whole-wheat pastry flour
- 3 Tbls. dark brown sugar
- 1-1/4 t. ground cinnamon
- 1/4 t. ground nutmeg
- 1/2 t. salt
Instructions
Preheat oven to 350 degrees. Brush a 9 x 9-inch square deep baking dish with a light coating of olive oil.
In a separate bowl, place thinly sliced apples and cherries. Add flour and sugar and toss to coat; add to the baking pan.
In a separate bowl, combine all the ingredients for the topping; drizzle with honey and olive oil and mix to coat. Sprinkle topping over the fruit.
Bake about 45-50 minutes or until the apples are soft and the topping is lightly browned.
NOTE: Serve warm with frozen vanilla yogurt or ice cream.
