Angel Hair Pasta Delight with Chicken
Quick easy meal to put together.
No heavy sauce, but a lot of flavor
Ingredients
- 8 oz. uncooked angel hair pasta
- 1 Tbls. olive oil + 1 Tbls. butter
- 1-1/2 c. chopped Vidalia (sweet) onion
- 3 garlic cloves, minced
- 1/4 c. water
- 8 oz. fresh baby spinach, washed and stems removed (see Note)
- 2-3 chopped roma or plum tomatoes
- 2 c. chopped cooked chicken breasts (season to your liking)
- 4 slices center-cut bacon, cooked crisp
- 3 Tbls. good balsamic vinegar (18 yr or older)
- 1/3 c. shredded Asiago cheese
Instructions
Pre-cook the chicken and season to your liking. I like using Greek seasoning from Pensey’s). Refrigerate until ready to assemble.
Pre-cook bacon, drain grease and pat pieces dry with paper towel; crumble and set aside. I like to microwave bacon (less mess). Place pieces on a plate lined with paper towel, cover bacon with a piece of paper towel and microwave for 3-1/2 minutes on high.
In a large nonstick skillet, heat oil and butter over medium heat. Add onion and sauté until tender (about 10 minutes); add garlic and sauté for 1 minute (start to cook pasta at this point).
Start to cook pasta according to package directions (takes about 6 minutes once the water boils).
Add water and spinach to the onions and garlic; cover and cook 2 minutes or until spinach wilts.
When pasta is done cooking, drain and transfer to a large pasta bowl.
Add tomato, chicken, bacon and balsamic vinegar to the onion and spinach in frying pan and cook for 1 minute or until thoroughly heated. Spoon over pasta and sprinkle with cheese.
Serves 6
NOTE: It seems like a lot of spinach but it cooks down well.
