Amish Apple Fritter Bread

This bread is a sweet vanilla flavored cake that’s packed with tart apples,
cinnamon and topped with a sweet brown sugar topping.

Using different types of apples can give your bread more flavor!
Use a combination of two or three different kinds to make the perfect blend.

Ingredients

  • Cinnamon Apples:
  • 2-1/2 c. (2-3 apples) granny smith apples, chopped - see Note
  • 1 Tbls. lemon juice
  • 2 t. cinnamon
  • Bread Batter:
  • ½ c. butter softened
  • ¾ c. white sugar
  • 3 large eggs
  • 2 t. vanilla extract
  • ½ t. salt
  • 2 c. unbleached all-purpose white flour
  • 1 t. baking powder
  • ½ t. baking soda
  • ½ c. low-fat buttermilk
  • Topping:
  • ¼ c. brown sugar
  • 1 t. cinnamon
  • ¾ cup walnuts, chopped, optional

Glaze

  • ½ c. powdered sugar
  • 1 Tbls. whole milk or cream

Instructions

Line a 9x5" bread pan (or 3 min loaf pans) with parchment paper and set aside. If not using parchment paper, be sure to grease pan well.

Apples: Prepare cinnamon apples by chopping into ¼ inch pieces, adding lemon juice and cinnamon; stir and let rest while preparing the batter.

Bread Batter: Using a mixer, cream together butter and white granulated sugar until fluffy (3-4 minutes).

Add in the eggs, vanilla, and salt, and mix well until creamy, 2-3 minutes, scraping sides of the bowl occasionally.

Add flour, baking powder, baking soda, and buttermilk last. Mix until just combined, then stir in half of the apples. If desired, stir in the chopped walnuts at this time.

Pour into prepared bread pan(s) and spread remaining apples on top.

Topping: Mix together brown sugar and cinnamon; sprinkle over apples.

Bake for 50-60 minutes (35-40 minutes for mini loaves) until inserted toothpick comes out clean.

Remove from oven and let stand for 10 minutes. Carefully remove bread from pan(s) and set on a cooling rack for another 5-10 minutes.

Glaze: After bread has been sitting for 15-20 minutes, combine powdered sugar and milk. Mix well and drizzle over bread before slicing and serving.

NOTE: MacIntosh or Pink Lay apples can be used as well
