Mexican Flatbread Pizza
This is a recipe of my creation.
You can also use a traditional pizza crust or my easy homemade pizza crust



Ingredients
- 1 lb. lean ground beef (or ground chicken or turkey)
- 1 pkt. taco seasoning (I use my homemade)
- 1 /2 c. water
- 3-4 flat breads (or regular pizza crust)
- 2 c. refried beans (I use my homemade)
- 1-1/2 c. red enchilada sauce (I use my homemade)
- 1-1/2 c. cheddar cheese, shredded
- 1-1/2 c. pepper-jack cheese, shredded
- 1 roma tomato, diced
- 2-3 green onions, sliced
- sm. can sliced black olives, drained
- shredded lettuce, optional
Instructions
Make enchilada sauce, if using, (quick link to my homemade sauce). You can make ahead and refrigerate until needed. Will make more than you need. Freeze to use another time, just thaw in refrigerator.
In a skillet, cook and crumble ground beef, turkey or chicken over medium-high heat. Drain grease. Add taco seasoning (quick link to my homemade seasoning and water, bring to a boil, then reduce heat to medium-low. Simmer for 10 minutes and set aside.
Warm refried beans in microwave. If using my homemade refried beans, you can freeze in small containers and use as needed (thaw in refrigerator overnight).
To Assemble: Spread a thin layer of refried beans on each flatbread or on pizza crust.
Top with meat mixture.
Drizzle enchilada sauce on top of the meat.
Sprinkle cheese on top of meat and sauce.
Add diced tomato, green onions and black olives.
Bake at 400 degrees for 5-7 minutes, or according to flatbread instructions on package and cheese is melted and bubbly. Or bake traditional pizza crust at 450 degrees for 12 to 14 minutes if making a thinner crust to get a crispier texture or at 425 degrees for 14-16 minutes if making a thicker crust.
After removing from oven, top with shredded lettuce, if desired.
Allow them to cool slightly before slicing and serving
