Lemon Rice

Easy, light and refreshing. Perfect side dish for fish, chicken or pork.
You can use brown or white long grain rice.
Basmati rice works great for this recipe also.

Ingredients
- 2 c. chicken broth
- 1 c. uncooked long grain rice (Uncle Ben's)
- 2 t. butter
- 1/4 t. garlic powder
- 1 lemon zested (add more or less to your liking)
- 2 Tbls. lemon juice
- 1/4 t. dried basil
- salt, to taste
Instructions
In a medium saucepan, bring broth, rice, butter, garlic powder, lemon juice, zest and dried basil (stir in fresh at the end) to a boil.
Reduce heat; cover and simmer for 25 minutes (if using Basmati rice, follow directions on the package).
Let stand 5 minutes, then fluff with a fork. Season with salt, and stir in fresh basil, if using instead of dried.
NOTE: Serves 4
You can also use fresh basil if desired.
