Cottage Cheese Raspberry Mousse

A fresh, tangy and healthy dessert, perfect for a summer treat.
Packed full of protein.

You can easily cut this recipe in half to make 4 small servings in mini jars

Ingredients

  • 2 c. low fat cottage cheese (Daisy)
  • 1 c. fresh raspberries
  • 1/4 c. honey or maple syrup
  • 1 t. vanilla extract
  • fresh raspberries and mint leaves for garnish
  • whipped cream, optional

Instructions

In a blender or food processor, combine cottage cheese, raspberries, honey, and vanilla extract. Blend until smooth and creamy.

Spoon the mixture into serving cups or mini jars, refrigerate for at least 2-3 hours or until the mousse has set.

To serve, garnish with fresh raspberries and mint leaves before serving. A dollop of whipped cream is optional

NOTE: Serves 4-6 depending on the size of dishes used to serve.
