Cottage Cheese Chocolate Mousse

This is rich and indulgent with a deep chocolate flavor.
A healthier twist on the typical chocolate mousse dessert, full of protein and low calorie.
You can easily cut this recipe in half to make 4 small servings in mini jars


Ingredients
- 2 c. low fat cottage cheese (Daisy)
- 1/2 c. cocoa powder
- 1/4 c. honey or maple syrup
- 1 t. vanilla extract
- mini chocolate chips or dark chocolate shavings for garnish
- whipped cream, optional
Instructions
In a blender or food processor, combine cottage cheese, cocoa powder, honey, and vanilla extract. Blend until smooth and creamy.
Spoon the mixture into serving cups or mini jars, refrigerate for at least 2-3 hours or until the mousse has set.
To serve, garnish with mini chocolate chips or dark chocolate shavings. A dollop of whipped cream is optional.
NOTE: Serves 4-6 depending on the size of serving dishes used.
