Cottage Cheese Brownies

This recipe is a healthier option compared to traditional brownies without sacrificing taste
Lower in calories and carbs, and a good source of protein.
The cottage cheese adds moisture and a fudgy texture, without needing excessive butter or other unhealthy fats.



Ingredients
- 1/2 c. dark chocolate chips or chopped chocolate, melted
- 1 c. cottage cheese
- 1 t. vanilla extract
- 1 egg
- 1/4 c. melted butter or avocado oil
- 3/4 c. low-fat milk
- 1/2 c. white sugar
- 1/2 c. cocoa powder
- 3/4 c. whole wheat pastry flour
- 1/2 t. baking soda
- 1/4 t. salt
- 1/4 c. mini dark chocolate chips
- 1/4 c. mini dark chocolate chips (for top)
Instructions
Add cottage cheese, melted chocolate, melted butter, vanilla extract, milk, sugar, cocoa powder and egg (avoid cracking the egg on top of the melted chocolate or butter in the food processor, if those ingredients are hot), to a food processor. Process on high until blended.
In a large bowl, combine whole wheat flour, baking soda and salt.
Transfer blended wet ingredients to the bowl with dry ingredients and mix until just combined.
Fold in 1/4 c. mini chocolate chips.
Transfer to a 9×9" baking dish, sprayed with non-stick spray or lined with parchment paper. Sprinkle another 1/4 c. mini chocolate chips over the top.
Bake at 350 degrees for 20-25 minutes in the oven, or until a toothpick comes out clean. (different ovens may vary so make sure to test the center before removing from the oven).
Allow to cool and then slice.
NOTE: Makes 16
I like to store in refrigerator, makes them even more fudgy.
I prefer dark chocolate, but milk or semi-sweet can be used as well.
