Cottage Cheese Blueberry Mousse

So good and refreshing. The lemon zest really adds to the overall flavor
Low in carbs, high in protein
You can easily cut this recipe in half to make 4 small servings in mini jars



Ingredients
- 2 c. low-fat cottage cheese (Daisy)
- 1 c. fresh or frozen blueberries, thawed
- 1/4 c. honey or maple syrup
- 1 t. lemon zest (additional for serving)
- fresh blueberries, for serving
Instructions
In a food processor or blender, combine cottage cheese, blueberries, honey and lemon zest. Blend until smooth and creamy.
Spoon the mousse into custard cups or mini jars.
Chill in the refrigerator for at least 2 hours before serving.
Garnish with fresh blueberries and lemon zest before serving.
NOTE: Serves 6
