Chicken: Baked Asian Orange

The orange flavor is a refreshing change from traditional oriental chicken

Ingredients
- 1 lb. boneless skinless chicken breasts
- 1 large orange (need juice & strips of zest)
- ¼ c. lemon juice
- 2-inch piece fresh ginger root, peeled and grated
- 2 garlic cloves, crushed
- ¼ c. low sodium soy sauce
- ¼ c. extra virgin olive oil
- 1 t. kosher salt
- ½ t. black pepper
- 1 t. honey
- 1/3 c. chicken broth
- 2 t. cornstarch
Instructions
Place chicken breasts in a gallon size zip lock bag.
Peel the zest off the orange in large strips and add to the bag with the chicken.
Juice the orange into a small bowl. Whisk in lemon juice, grated ginger, crushed garlic, soy sauce, olive oil, salt, pepper and honey.
Pour ½ cup marinade into the bag with the chicken, seal and use your hands to massage into the chicken. Place in refrigerator and let marinade at least 30 minutes or all day. Refrigerate leftover marinade.
When ready to bake, preheat oven to 350 degrees.
Place chicken in a small baking dish and discard marinade from bag with chicken, but keep orange zest strips.
In a medium bowl, whisk the chicken broth and cornstarch together. Add reserved marinate and whisk to combine. Pour over chicken breasts in baking dish.
Bake uncovered for 40-50 minutes or until meat thermometer reads 165 degrees. Let rest 5 minutes.
Drizzle pan sauce over chicken to serve.
