Baked Cottage Cheese Eggs

Add your favorite vegetables or protein sources for extra flavor and nutrition.

This can be made in a 9x9 baking dish or individual ramekins.

Ingredients

  • 6 large eggs
  • 1 c. low-fat cottage cheese (Daisy)
  • 1/4 c. milk
  • 1/4 c. shredded cheddar cheese (or cheese of your choice)
  • 1/4 t. salt
  • 1/4 t. black pepper
  • fresh herbs, optional (like parsley or chives)

Additional Add-Ins

  • chopped vegetables (spinach, bell peppers, tomatoes, mushrooms, onions)
  • protein (cooked bacon crumbled, cooked breakfast sausage crumbled, diced ham, cooked turkey chorizo crumbled)
  • herbs (chives or parsley)

Suggested Add-In Choices

  • Spinach and Feta: Chopped spinach, chopped bell peppers, crumbled feta, crumbled cooked bacon and chopped sweet onion. Top with chopped tomatoes to serve.
  • All Veggie: Chopped tomato, diced bell peppers, diced onion, diced zucchini, etc.
  • Mexican-Style: Cooked crumbed turkey chorizo sausage chopped green chiles, diced bell peppers, drained black beans, black olives and use shredded Monterey Jack cheese. Top with salsa and serve with salsa, avocado, or sour cream.
  • Ham & Swiss: diced ham, diced peppers and use shredded Swiss cheese

Instructions

Preheat oven to 350 degrees.

Grease a 9x9 inch baking dish or ramekins with olive oil spray.

In a large bowl, whisk together eggs, cottage cheese, milk, cheddar cheese, salt, and pepper as well as herbs, if using.

Stir in any optional add-ins of choice.

Pour the egg mixture into the prepared baking dish or divide among ramekins.

Bake for 25-30 minutes, or until the eggs are set. Tops should be browned nicely.

Let cool for a few minutes before serving.
